Celebrating the Future of Hospitality

Last Friday, we had the pleasure of attending the Sponsors & Business Partners Lunch at Westminster Kingsway College — an inspiring afternoon that brought together industry leaders, educators and producers all championing positive change in the food world.

Hosted in the college’s renowned Vincent Rooms, a trio of training restaurants where students transform classroom learning into real‑world culinary experience, the event was a powerful reminder of why Westminster Kingsway is recognised as the UK’s leading centre for Hospitality and Culinary Arts. The standard of teaching — and the standard of cooking — was nothing short of exceptional.

As proud suppliers of our Mellow Yellow cold‑pressed rapeseed oil to the college’s training kitchens, we know the students use it every day. But seeing how they bring it to life on the plate was something truly special. Under the brilliant guidance of Senior Chef Lecturer Jose Luis Souto and his talented team, the students delivered a menu that could rival any fine dining restaurant.

A Menu to Remember

The dishes showcased both technical skill and creative flair, with highlights including:

  • A delicate Clawson creamed Stilton mille‑feuille
  • A beautifully constructed Gressingham terrine of duck, guinea fowl and corn‑fed chicken, wrapped in courgette with red onion marmalade
  • Caramelised slow‑braised abalone
  • Rib‑eye Wagyu beef served with soba noodles and grilled aubergine
  • A show‑stopping Callebaut gianduja parfait with a cherry centre and
  • Madagascan vanilla ice cream

Each plate was a celebration of craftsmanship, confidence and great British produce, and was exactly what the industry needs at a time when hospitality faces real challenges.

The Future Looks Bright

What struck us most was the passion and professionalism of the students. If the dishes they served are any indication of what’s to come once they step into the industry, the future of British hospitality is in very safe hands.

It was a privilege to attend, and a joy to leave each guest with a bottle of Mellow Yellow in their delegate bag. We’re incredibly proud to support the next generation of chefs and hospitality professionals, and we can’t wait to see where their journeys take them next.
