Air Fryer Seed & Nut Granola
Making your own granola is far easier than you might expect, and using the air fryer speeds everything up beautifully. This seed and nut blend turns golden, crunchy and delicious in minutes, and keeps well for weeks in an airtight container. Made with Mellow Yellow Cold Pressed Rapeseed Oil, it’s a lighter, healthier alternative to many shop‑bought granolas and a great way to start the day.

Weigh the oil, honey and sugar into a large saucepan and place on a medium heat, stirring until the sugar is melted and the mixture is gently bubbling.

Remove from the heat, add the mixed nuts and pumpkin seeds, then add the oats. Mix thoroughly until the oats are completely coated with the oil and honey mixture.

Remover the air fryer crisper plate, preheat the air fryer for 5 minutes at 190°C. Pour the mixture into the air fryer basket and spread out, it should be rough not pressed down.

Bake at 140°C for 12-15 minutes or until just going golden, be careful not over bake!

Leave to cool in the air fryer drawer before crumbling up into small pieces and store in an airtight container. Serve with fruit, milk or yogurt.
