Soft, fruity and naturally delicious, these apple & sultana muffins are made with Mellow Yellow cold‑pressed rapeseed oil for a beautifully light, moist texture. They’re quick to mix, perfect for breakfast, lunch boxes or healthy snacks on the go, and ideal for baking with kids thanks to the simple, no‑fuss method. Packed with real apple and juicy sultanas, these easy muffins are a family favourite you’ll want to make again and again

Method

    Preheat the oven to 180°C/350°F/gas mark 4.

    Combine the flour, bicarbonate of soda, baking powder, salt and cinnamon and mix well.

    In another bowl, thoroughly beat together Mellow Yellow rapeseed oil, sugar, eggs and milk powder. Stir in the grated apple and sultanas. Then gradually add the flour mixture and beating just enough to combine all the ingredients.

    Spoon into a muffin tin lined with 12 cases, and bake for around 25 minutes.

    When baked, remove from the oven and allow to cool on a wire rack before enjoying!

  • 140g light brown caster sugar

  • 2 eggs

  • 150ml Mellow Yellow rapeseed oil

  • 340g grated apple

  • 100g sultanas

  • 225g wholemeal self raising flour

  • 1 tsp baking powder

  • ¾ tsp bicarbonate of soda

  • 1½ tsp ground cinnamon

  • ½ tsp salt

  • 3 tbsp milk powder
