Asparagus, Radish & New Potato Salad

This simple salad by Jenny at The Salty Chilli is a true celebration of summer. Packed with seasonal asparagus, radishes and new potatoes, and drizzled in our Mellow Yellow Honey & Mustard Dressing, it’s a fresh, punchy and flavour-packed meal that’s perfect to enjoy outside in the garden.

Method

    Blanch the asparagus in boiling salted water for one minute then plunge into ice water.

    Boil the potatoes for approximately 10 minutes until tender. Drain and rinse under cold water.

    Assemble the pea shoots, asparagus, radish, potato and crumbled feta on a large platter then pour the golden Honey & Mustard dressing over the top

    Garnish with fresh dill & enjoy!

Ingredients

  • 1 tbsp Mellow Yellow Honey & Mustard dressing

  • 1 bunch asparagus sliced into thirds on the diagonal

  • 1 heaped tsp Dijon mustard

  • 6 radishes quartered

  • 6 new potatoes halved

  • 80g bag of pea shoots

  • 75g feta cheese crumbled

  • Fresh dill to serve
