Easy Peanut Butter Bars

These easy peanut butter bars are everything you want in a wholesome homemade snack: simple ingredients, big flavour, and zero fuss. With just six ingredients, including Mellow Yellow cold pressed rapeseed oil, oats, honey, date syrup, roasted peanuts and a rich dark roast peanut butter, they deliver a seriously good taste with every bite.

High in protein, dairy-free and naturally sweetened, they’re the kind of moreish bars you’ll want to keep on repeat. Enjoy them as a grab‑and‑go breakfast, a mid‑morning pick‑me‑up or a satisfying post‑workout treat.

Method

    Preheat the oven to 150C Fan.

    Pour the oil, date syrup and honey into a pan, stir to combine and heat on a medium heat until bubbling.

    Add the porridge oats and chopped peanuts to the pan and give everything a good mix.

    Place half the mixture in the lined pan and top with blobs of peanut butter before spreading it evenly across the surface. Tip the remaining mixture into the pan and smooth over, using the back of a spoon (or palette knife) to press the mixture firmly into the tin.

    Bake in the oven for 25 minutes until golden brown. Set aside to cool thoroughly on a cooling rack before cutting into 12 bars.

  • 100g Mellow Yellow Cold Pressed Rapeseed Oil

  • 100g date syrup

  • 120g honey

  • 225g porridge oats

  • 125g roasted peanuts, roughly chopped

  • Dark roast peanut butter (we like Manilife)

  • (You’ll also need a lined, 9-inch square pan)
