Eli’s homemade nutty granola bars are perfect for lunchboxes, work snacks, or breakfast on the go. Made with our Mellow Yellow cold pressed rapeseed oil, honey, nuts, seeds and sultanas, they are endlessly customisable and ideal for prepping ahead. A nutritious snack that’s sure to become a weekly staple!

    Preheat the oven to 150ºC. (fan)

    Place the Mellow Yellow cold pressed rapeseed oil and honey in a saucepan and over a moderate heat, stir until the honey has melted – the oil and honey won’t combine but just need to be brought up to a boil for a few seconds.

    Remove from the heat and add all the other ingredients. Stir well and place the mixture into a 9 inch (23cm) square tin (oiled and lined with greaseproof paper). Press down firmly. Bake for 25 minutes until golden brown. Leave in tin to cool completely.

    Peel off the baking paper and slice into 10 bars with a sharp serrated knife.

  • 200g porridge oats

  • 50g pumpkin seeds

  • 100g pistachio nuts (or any nuts of your choice) roughly chopped

  • 50g flaked almonds

  • 100g sultanas
