Spatchcock Chicken with Smashed Cucumbers
This juicy spatchcock chicken is marinated and glazed with Ultimate Chilli Dressing, creating a flavour‑packed roast that’s anything but ordinary. Served over smashed cucumbers with spring onions, chilli, sesame and fresh herbs, it’s a vibrant platter that brings heat, crunch and freshness in every bite.

Spatchcock the chicken
Place the chicken breast-side down on a board. Cut along both sides of the backbone and remove it, then turn over and press firmly to flatten. -

Marinate
In a bowl, mix the Ultimate Chilli Dressing, soy sauce, garlic and ginger. Rub all over the chicken, coating well. Cover and refrigerate for 2–3 hours. -

Cook the chicken
Preheat the air fryer to 180°C (or oven to 200°C / 180°C fan).
Cook the chicken skin-side up for 35–40 minutes, then turn and cook for a further 15–20 minutes, until deeply golden, crisp and cooked through to the bone. Brush with extra dressing halfway through for a glossy finish. -

Prepare the smashed cucumbers
Lightly smash the cucumbers, then break into bite-sized pieces. Place in a bowl, sprinkle with salt and leave for 10–15 minutes to draw out excess moisture. Drain well, then toss with Ultimate Chilli Dressing, spring onions, sliced chillies and a sprinkle of sesame seeds. -

Assemble the platter
Pile the smashed cucumbers onto a large serving platter, then place the cooked chicken over the top. -

Finish and serve
Drizzle a little extra Ultimate Chilli Dressing over the cucumbers. Scatter over extra spring onions, chillies and fresh coriander leaves. Serve as a sharing platter, or carve the chicken into portions and serve individually with the smashed
