Spicy Tomato Orzo Soup

2
25 minutes

There’s nothing quite like a bowl that warms you from the inside out, and this spicy tomato orzo soup by Chop Chop Ems does exactly that. The gentle heat from our Mellow Yellow Chilli Oil brings a slow, soothing warmth, the silky orzo laps up the tomato flavours and the hot honey halloumi croutons add an irresistible texture clash. Comforting, nourishing, and utterly delicious.

Method

  1. 1

Gently fry off carrots, onion, and celery in 1 tbsp of oil for 10 mins, then add the garlic, stirring for 1 minute further.

  2. 2

Add the tomato purée and herbs and cook for 5 minutes until the paste turns a deep red colour.

  3. 3

Add the orzo and broth, plus 300ml of boiling water. Simmer for 10 minutes, whilst stirring frequently, adding additional water if needed.

  4. 4

Once the orzo is cooked through, stir through the cream cheese.

  5. 5

In a separate pan, dry fry cubes of halloumi until golden, then add the Chilli Oil and honey, cooking for 1 minute until sticky and glossy.

  6. 6

Ladle the soup into warm bowls and top with the halloumi croutons.
