Strawberry Toasts with Goat’s Cheese & Balsamic Dressing

 

Fresh, fruity and bursting with flavour, these delicious strawberry toasts with goat’s cheese and balsamic dressing are a brilliant snack or brunch idea when you fancy something a little different.

A wonderful way to enjoy seasonal strawberries, they strike the perfect balance between sweet and savoury, with Mellow Yellow Balsamic Dressing bringing in an extra kick of flavour that works a dream with the crusty toast and creamy goat’s cheese.

Method

    1) Preheat the grill, slice the sourdough and drizzle over the Mellow Yellow Cold Pressed Rapeseed Oil.

    2) Grill the bread for a few minutes, turning halfway through until nicely toasted on both sides.

    3) Scoop out the soft goats’ cheese from the outer skin and add to a bowl with the cream cheese and honey, whisking together until smooth and creamy.

    4) Smooth the cheese over each of the toasts, top with the sliced strawberries, baby basil and a good drizzle of Mellow Yellow Balsamic Vinegar Dressing.

  • 2 tbsp Mellow Yellow Cold Pressed Rapeseed Oil

  • 300g goat’s or feta cheese

  • 2 heaped tbsp cream cheese

  • 1 tsp honey

  • 400g punnet of strawberries – sliced

  • Drizzle of Mellow Yellow Balsamic Dressing

  • Tsp baby basil leaves
