Smoked Haddock, Jersey Royal & Asparagus Salad

Using wonderful British seasonal ingredients, this smoked haddock salad features Jersey Royal new potatoes, asparagus, watercress and red onion to create a tasty and filling summer salad. All the flavours in this salad are brought together with Mellow Yellow Honey & Mustard Dressing. Method

    Boil your new potatoes until cooked through, depending on size this should take 15-20.

    Poach your haddock in a dash of water, oil and seasoning until cooked through and able to be flaked.

    Pour 1 tbsp of Farrington’s Mellow Yellow Rapeseed Oil into a sauté pan and gently fry the sliced red onion until translucent and just starting to caramelise. Remove the onions, leaving the oil in the pan. Add your asparagus and a pinch of salt and fry until tender, turning occasionally.

    Assemble your salad with the watercress first, then red onion, asparagus, potatoes and flaked haddock on top. Drizzle with your Farrington’s Mellow Yellow Honey & Mustard Dressing and serve.

  • 250g Jersey Royal New Potatoes (or other new potatoes)

  • 300g Smoked Haddock

  • 150g Asparagus

  • ½ Red Onion, thinly sliced

  • 40g Watercress (½ bag)
